Preheat your oven to 350°F (175°C) and grease a standard-sized loaf pan.
Add all ripe bananas to a bowl and mash them manually until they morph into a smooth mixture. Don’t worry they may have a few lumps.
Add the applesauce, coconut oil, brown sugar (or your preferred sweetener), and vanilla extract to the mashed bananas. Mix until well combined.
Take a separate bowl and whisk together the flour, baking soda, salt, and ground cinnamon (if you prefer).
Gradually add the dry ingredients to the wet ingredients and stir the mixture gently. Be careful not to overmix; otherwise, it will become waxy.
If you’re using nuts or chocolate chips, coconut, or walnuts, add them to the batter.
Pour the batter into the greased loaf pan and spread the mixture evenly.
Bake for 50-60 minutes. Take an unused and clean toothpick, and try to insert it into the centre. If it comes out clean, it means your banana bread is ready.
Let the banana bread cool in the pan for 10 to 20 minutes.
Transfer it to a wire rack to cool completely. Make its slices and enjoy the delicious vegan banana bread with incredible taste.
